Chocolate Dipped Anzac Biscuits
- 1 cup flour
- 1 cup coconut thread
- 2/3 cup tightly packed brown sugar
- 1 cup jumbo rolled oats
- 125g unsalted butter
- 2 tbsp golden syrup
- 1/2 tsp baking soda
- 2 tbsp boiling water
- 200g good quality dark chocolate, melted

A delicious twist on a Kiwi favourite!
Preheat oven to 160 degrees and line two baking trays with baking paper.
Place flour, coconut, sugar, and oats into a mixing bowl and combine. Melt butter and golden syrup over a low heat. While this is melting combine the baking soda and boiling water and stir. As it fluffs up stir it into the butter mixture. Quickly pour the butter mixture over the oats while still fluffy and stir to combine.
Using a tablespoon, roll spoonfuls into balls and place about 3cm apart on the baking paper, flattening each slightly. Bake for 15-20 minutes until lightly golden. Once cool, dip in melted chocolate.
