Cool-down Summer Fruit Salad
Have a large mixing bowl handy and add the fruit as you go.
Remove skin and core of pineapple and finely cut into small slithers. Rinse blueberries. Peel oranges and finely cut into small pieces. Wash apricots and finely cut into small pieces. Peel and core apples and finely cut into small slithers. Squeeze over juice of half the lemon. Peel bananas and cut lengthways then into small pieces. Squeeze over juice of half the lemon. Peel and grate ginger. Gently turn all ingredients with a wooden spoon. Transfer fruit salad into serving bowl or platter of your choice. Serve with a dollop of fresh organic yoghurt and a sprinkle of LSA if desired. Garnish with mint leaves.
