Loaded Anzac Biscuits

Ingredients:

    • 125g butter, softened
    • 1⁄2 teaspoon vanilla essence
    • 125g brown sugar
    • 1 egg
    • 1⁄2 teaspoon bicarbonate of soda dissolved in 4 teaspoons warm water
    • 90g flour, sifted
    • 140g rolled oats
    • 45g desiccated coconut
    • 185g chocolate chips
    • 75g raisins

A really delicious and soft ANZAC biscuit. Includes chocolate and raisins which makes it even better!

Method:

1. Place butter, vanilla essence and sugar in a mixing bowl and beat until light and creamy. Beat in egg, bicarbonate of soda mixture and flour.
2. Stir in oats, coconut, chocolate chips and raisins. Place rounded tablespoons of mixture 10cm/4 in apart on greased baking trays. Using a knife, spread out each mound of mixture to form a thin round, 7.5cm/3 in diameter. Bake for 8-10 minutes or until golden at 190°C. Transfer to wire racks to cool.
