1. Place butter, vanilla essence and sugar in a mixing bowl and beat until light and creamy. Beat in egg, bicarbonate of soda mixture and flour.
2. Stir in oats, coconut, chocolate chips and raisins. Place rounded tablespoons of mixture 10cm/4 in apart on greased baking trays. Using a knife, spread out each mound of mixture to form a thin round, 7.5cm/3 in diameter. Bake for 8-10 minutes or until golden at 190°C. Transfer to wire racks to cool.
