Luscious Lamb And Lentil Soup

Ingredients:

  • 1 Kg lamb bones boiled, in a large pot,the day before, in salted water foran hour, cool. Take any meat off and remove bones, leave overnight, remove fat, lovely jelly left.
  • Add 2 medium carrots, 1 large onion, 3 cloves NZ garlic, 1 1/2 cups lentils, 1bunch Bok Choy, 1 cup frozen corn, any vegetable juice you have drained off over the last 2-3 days, 2 Tblsp Tamari, 1 1/2 tsps marmite, AND 1 tsp each of Tumeric, Ground Ginger, Smoked Paprika, Oreganum and black pepper.
  • I use whatever seasonings I have in the pantry that are suitable and you can too.

This is a hearty delicious soup that is a meal on its own.

Method:

Dice the carrot, slice the onion, chop the garlic and add to the lamb stock along with the remaining ingredsients. Simmer on low for an hour, check seasonings in case more salt required.
