This was my favourite slice growing up. Every school holidays when I stayed with my grandparents I would beg my Nana to bake it for me on Monday mornings when she did the week's baking. Now I am all grown up I can make it for myself whenever I like! Perfect to share for afternoon tea or with a cup of tea after dinner.
Cream butter and sugar, then add the flour, baking powder and coconut and mix well. Spread into a shallow tin and bake at 180 degrees for 20 minutes. While the base cooks, prepare the topping.
While the base is still warm, spread the topping onto it and slice into squares. Leave it for a little while to firm up before serving.
