A Simple and Cute Starter to delight guests and which is pretty light and yummy too.
1. Keep Smaller Pitted Olives aside ( half of the total amount)
2. Slit the larger olives on one side to make an opening like cutting open a roll.
3.Fill the cavity with enough cream cheese to fit. (Ths is the body of Penguin)
4.Cut Carrot into thin discs (this will be the feet of the penguin)
5. Cut a tiny "v" Slit in the carrot discs (Keep these to insert straight end into a slit made in the smaller olives to form a beak)
6. Assemble the Starters by inserting a toothpick through the top of the small olive down through the body of the penguin and lastly through the disc of carrot with the cutout "V" facing forward.
Place on a plate and refrigerate till you are ready to serve. If you find the cream cheese is runny or melting , place in fridge to firm up again before attempting to use it.
