Quick Monday Night Felafels

Ingredients:

  • Felafel Mix
  • 1 can chickpeas, drained
  • 1/2 yellow onion, diced and lightly sautéed
  • 5 garlic cloves, minced and lightly sautéed
  • 1/2 bunch coriander
  • 1/4 bunch flat leaf parsley
  • 1/2-2/3 cup plus all purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon ground cumin
  • 1 1/2 tsp hot paprika
  • 2 teaspoons ground coriander
    1 1/2 teaspoons salt
    3/4 teaspoon black pepper
    Tzatziki
    1 1/2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground cumin
  • 1 garlic clove, minced
  • 1/2 cup Greek yogurt
  • 1/3 hothouse cucumber, grated
  • 1/2 lemon, juiced
  • To Serve
    4 whole wheat pita pockets
    2/3 head of romaine lettuce, chopped
    1 tomato, diced

A quick meat-free meal, perfect for a busy Monday night! Packed full of goodness with maybe a little leftover for lunches - make sure to double the recipe if feeding a crowd!

Method:

Mix the chickpeas, onion, garlic and the herbs in a food processor until smooth. Stir in the rest of the ingredients and let sit in the freezer briefly while you prepare the other ingredients.

Mix the tzatiki ingredientswell to combine and keep in the fridge until ready to serve.

Heat a pan to medium-high and add 2 tbsp olive oil. Using a tablespoon drop 1 tbsp balls of the felafel mix into the hot oil. Allow to fry 3 minutes or until the bottom has a light crust. Gently flip the felafel and use the back of a spatula to press down slightly, allowing for more even cooking. Cook 4 minutes more or until lightly browned on both sides. Transfer to a waiting oven tray in a warm oven.

Split a pita in half and spread the inside liberally with the tzatziki. Fill with chopped lettuce and tomatoes. Take 1-2 felafel patties, slice into three pieces each and add to the pita, topping with more tzatziki if desired. If you like it spicy like Wil add a little sriracha for that extra kick.
