Quinoa & Apricot Breakfast Parfait

Ingredients:

  • 1/4 cup cooked mixed quinoa (I used red, white, black and amaranth)
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 2 tsp desiccated coconut
  • 2 tsp chia seeds
  • 3-4 tbsp milk
  • 3 small apricots, chopped
  • 1 tbsp slivered almonds
  • 3-4 tbsp yoghurt

Method:

Mix the spices, seeds and coconut into the quinoa with the milk. Microwave until warmed through. Layer in a parfait glass, topping with layers of chopped apricot, slivered almonds and yoghurt. Enjoy!
