A lovely simple dinner that is quick to make with lots of yummy vegetables using Black Beans and Spicy Chilli Beans.
Dice up tomatoes, cucumber, capsicum and finely slice spring onion and lettuce into a bowl.
Spread nachos on to a plate or cooking tray and sprinkle grated cheese on to them.
Open black beans and chilli beans and put in to a pot on the stove, heat until boiling, remove from heat. Tip mixture on to the nachos and sprinkle cheese, put under grill to melt cheese.
Take out and spread the tomatoes, cucumber, lettuce, capsicum and spring onion on the top.
